Inoculation
The woodland chicken survives on oak logs. During a colonization time in filter patch bags above ground, logs should be partially buried under 2 inches of dirt. On logs and emerging from the ground, the mushrooms will develop fruit. Remember that chicken of the woods is prone to being outcompeted by other fungi and is not a constant grower if your logs are not treated beforehand. Ensure that you gather young chicken-of-the-woods mushrooms to prevent a brittle texture. When cooked, they have a meaty, somewhat lemony taste and chicken-like texture. The harder exterior parts are ideal for drying and use in soups or risottos, or for grinding into rubs.
